Dinnerware is at the helm of the artistic experience and is also, regrettably, part of the extraordinary amount of washing necessary for multiple restaurant seatings. Your leftovers come to you wrapped in foil, boxed in Styrofoam, stuffed with napkins and loaded with plastic picnic ware. What an environmental nightmare! At Ancolie, environment is the number one concern, which is how the tiny eatery and catering business, nestled in the heart of Greenwich Village came to life: in the form of glass jars. Meals are set elegantly in those charming glass vessels. Each tasty layer is as colorful as it is nutritious. Your whole meal is made possible by the ingenious configuration of food variety and the careful “jarsentation” by the restaurant staff, at the direction of Chloé Vichot, owner and founder of Ancolie. So, just where did Ms. Vichot come up with this idea? Her concern for the multitude of waste, generated every day in our consumer driven society eventually led her to what I call the 3R's: re-think, re-recycle and re-use.
The glass jars are included in the takeout menu, with a cash-back incentive for returns. A large percentage of her business is the catering service they offer, especially photo shoots where weight and health conscious models as well as the crew appreciate the concept of having it all in one place, accommodating the time constraints of their busy schedules.There have been orders for the jars alone from far -flung places across the globe and there are no signs of orders slowing down any time soon. I met with Chloé on a hot weekday afternoon and spoke with her about how her business evolved and her plans for the future.
